Quick vegetable rice with chicken breast strips
An easy-to-prepare rice dish for when you have to be quick.
Portions 4 people
- 200 g brown wholegrain rice
- 1 litre water
- 100 g vegetables of your choice, washed and finely chopped.
- 1 tbsp clear vegetable soup
- 2 chicken breasts
- Primavera as required
- 2 tbsp oil (high burning point)
- Fuego as required
Cook the rice
Boil the water in a sauce and add the rice and vegetables. Simmer on a low flame for 20 minutes.
Fry and season the chicken
Meanwhile, fry both chicken breasts in hot oil in the frying pan for about 5-7 minutes on each side until golden brown. Remove from the pan, season with Fuego and cut in strips.
Fluff the vegetable rice up with a fork and dish up on four plates with the chicken strips. Dribble olive oil over the rice just before serving.
