Cauliflower is highly valued for its nutritional and dietary properties, palatability. It is rich in protein, vitamins and minerals, is well assimilated by the human body. It contains an increased amount of essential amino acids that are not found in other vegetables and is rich in vitamin C. In this it is 2-3 times higher than white cabbage. Not surprisingly, 50 g of cauliflower provide the daily rate of our need for this vitamin. The cabbage head also contains many vitamins B1, B2, PP, salts of iron, calcium, potassium and phosphorus.
