Turmeric is one of the favorite spices of the East and one of the main components of a mixture of curry and other spice blends. It seasons meat, fish, rice and vegetable dishes, it adds freshness to food products, makes them more resistant during prolonged storage. The rhizomes of turmeric contain an essential oil – 3-5%, orange dye curcumin highly soluble in fat – 0.3-0.5%, starch, gum, gum arabic, and fatty oil. They have choleretic, anti-inflammatory, antiallergic effect, increase stomach secretion. Turmeric is used for gastrointestinal tract diseases, which are caused by reduced bile formation and biliary excretion. Curcumin also has the anti-inflammatory, cholesterol-lowering, and anti-bacterial effect. Turmeric has an antiseptic effect, is effective for strengthening hair and has anti-dandruff properties.
